Here I am being a bad blogger and even a bad vegan no less. Yesterday was National Kale Day and I didn’t give you a new recipe or even eat kale myself. I hope they don’t revoke my vegan status! Other good bloggers posted their favorite kale recipes yesterday. You should definitely check those out! But in all seriousness how do these food holidays come about?
As far as kale goes I’m a big fan of my Kale Salad w/ Sweet Mustard Dressing. I could literally eat this everyday. This salad even made the PPK 100 list two years ago. If you haven’t already tried it what are you waiting for?! And I’m a very big fan of the Kale Slaw with Curried Almond Dressing from Dreena Burton. You really can’t go wrong with kale salad as long as you go to town on it and give it a good rub down. Massage it with something salty and acidic for at least a few minutes. If you’ve been to any of my cooking demos at festivals you’ve witnessed this process of massaging the kale. It’s crucial!! JL shows you how to do that in this video.
Probably the most loved recipe in ALL of Blissful Bites is the Mac ‘n’ Kale salad. It’s genius really and only has a few ingredients. Though it’s my most prized recipe I’m going to share it with you today to make up for the fact that my blogging and sharing new recipes with you has been lacking this year. Do you still love me?
