Meatless Monday: Strawberry Ginger Limeade
Hope you had a wonderful weekend!! I will be honest with you, I haven’t been cooking that much except for creating new recipes for my cooking classes and cooking for my dad, which is simple macrobiotic food. Those new recipes for my classes will most likely go in my next cookbook, so I can’t share them all. But if you come to the cooking classes you will get recipes from Blissful Bites and new creations!
This is a new take on the Strawberry Mint Limeade in my book. I always put ginger in my green juices so it only made sense to pair it with fresh strawberries and lime. I love summer because it’s berry season!!
Strawberry Ginger Limeade
Makes about 6 cups
2 cups fresh strawberries, tops removed and sliced in half
2 tablespoons lime zest
1/4 cup lime juice (about 3 to 4 limes)
1 tablespoon ginger juice*
1/3 cup maple syrup (or more to taste)
1/2-1 cup filtered water
2 cups ice or more for desired texture
Mint leaves for garnish
Directions:
Blend all ingredients in a blender until smooth and no chunks remain. Serve cold garnished with mint leaves.
* To make ginger juice grate a large piece of ginger with a Microplane zester or Japanese ceramic grater then squeeze out the juice.
