Mixed Berry Couscous Surprise
This super quick and easy grain dish is perfect for breakfast or brunch. Feel free to add whatever fruits are in season at the moment. Kids go crazy for this! This and many more kid-friendly dishes can be found in Blissful Bites!
Mixed Berry Couscous Surprise
Makes about 4 to 6 servings
2 cups organic couscous
1 cup organic apple juice
1 cup orange juice
1 cinnamon stick
1 cup organic strawberries washed and sliced
1/2 cup organic raspberries washed
1/2 cup organic blueberries washed
1 tablespoon fresh mint chopped finely
1 teaspoon cinnamon
Fresh mint leaves to garnish
Directions:
Place couscous in a bowl. Pour apple and orange juice in a saucepan and add the cinnamon stick. Bring to a boil and then pour over couscous. Cover bowl with a towel or sushi mat and leave for about 5 minutes or until all the liquid is absorbed. Remove cinnamon stick and fluff couscous with a fork. Add mint and berries to the couscous. Sprinkle with cinnamon. Toss gently. Place in bowls and garnish with mint leaves.
