Meatless Monday: Sweet Polenta Porridge
Polenta, or corn grits, are so delicious and make the greatest breakfast porridge. If you are sick of oatmeal and cereal give this Sweet Polenta Porridge a try! Don’t use premade polenta, actually buy the grains from the bulk section at your local natural food store. Top with whatever fruit and nuts/seeds that you want. I change it up everyday so I never get bored of this healthy breakfast!
Sweet Polenta Porridge
Makes 3 to 4 servings
3 cups filtered water
Pinch sea salt
1 cup yellow polenta washed
1/3 cup soy rice or almond milk
1 tablespoon sweetener more or less to taste
2 tablespoons raisins (optional)
Dash of cinnamon
1/2 cup walnuts chopped and toasted
Directions:
Bring water and polenta to a boil in medium saucepan with sea salt. Simmer whisking frequently for about 10 minutes while polenta gets thick and creamy. Stir in almond milk, raisins, cinnamon and sweetener to polenta. Whisk over low flame for a few minutes to incorporate the ingredients. Pour into bowls immediately and walnuts over porridge. (Use whatever toppings you like: fruit, nuts, seeds, etc).
Note: I make a protein porridge like this every morning. 1/4 cup of polenta to 1 cup almond milk with 2 tablespoon protein powder. Same directions as above!
