Cali-Style White Bean Bruschetta
First week of Vegan MoFo is behind us and I’m still hanging in there.
Cali-Style White Bean Bruschetta
1 can organic white beans, drained and washed
1 avocado, cubed
Handful of fresh basil, chopped
1 cup cherry tomatoes, halved or cut in fours
Olive oil
Balsamic vinegar
Sea salt and black pepper
Directions:
Stir all together and let marinate for at least 30 minutes. Taste, and season with salt as necessary. Toast bread and pile it on.
