August Cooking Tool of the Month – Dehydrator
Today’s guest post is an exciting one! Do you juice? Have you ever wondered what you could do with all the pulp that is collected from juicing? I sure have. It feels so wasteful to just throw away that pulp. Heidi shows us how she made dehydrated crackers with the pulp of one of her favorite juices! I love that she adds sesame seeds to these crackers because they have more absorbable calcium that any food.

My family just came home from a trip to the Canary Islands. While there, they were introduced to a new dish, called ropa vieja – literally, ‘old clothes’. It’s a leftover dish with potatoes, chickpeas, and any other random odds and ends laying around – much like our ‘shepherd’s pie’.
I couldn’t help laughing at the name and thinking about how vivid a portrait it paints of leftover-based meals. And then it dawned on me: my juice pulp crackers are ‘Old Clothes’ crackers. A meal almost (maybe even) better than the first.
As with any leftovers recipes, you must start with the initial meal – in this case, the juice. Any green juice recipe will do, but here’s one of my most frequent ones:
Green Beet Juice
1 bunch kale
1 medium carrot
1/4 fresh beet (it seems the longer they sit in my fridge the more earthy and bitter they taste)
1/2 green pepper
1 green apple
Juice all in juicer and drink on ice.
Get ready for your old clothes…
Old Clothes Crackers
3 cups loose veggie pulp (don’t pack)
1 cup milled flax seed
2 tablespoon olive oil
2 tablespoon sesame seeds
2 teaspoon sea salt
Cotmbine all the ingredients. To form the crackers you can do it in your hands or use a rolling bin and cookie cutter. Stick in a dehydrator a for 9 – 11 hours.
Or, if you don’t have a dehydrator, spread on cookie sheet, pre-cut cracker pieces, and cook in the oven at 300* for 40-60 minutes (until crisp), flipping when solid enough to flip (roughly 20 minutes).
VARIATIONS (as all good old clothes should have!)
Rosemary and Garlic – add 2 minced cloves garlic and 3 minced sprigs of rosemary to cracker mix.
Basil and Sundried Tomato – add 5 minced sprigs of basil and 6-7 diced sun dried tomatoes to cracker mix.
Cinnamon Sugar- (especially good for more-fruit based pulp) add 2 TBSP cinnamon and ¼ c. honey to mix.
