Right now I’m soaking up some rays and eating delicious vegan macrobiotic food made on open flame out in the middle of the Tahoe National Forest. I’ve scheduled this post to show up on Monday, but I’ve never done that before so hopefully you are reading this and it is Monday.
Since it’s been crazy hot this Summer all over the place today’s Meatless Monday post is one of my favorite Summertime smoothies!
nectarine cobbler smoothie
(makes 1 smoothie)
You’ll be so surprised how much this smoothie tastes like a peach cobbler in a cup. SO delicious!
1 nectarine, peeled, pitted and chopped
1 6oz container plain soy yogurt, unsweetened
2 tablespoons maple syrup
4 ice cubes
Dash of cinnamon, inside and on top for garnish
Combine all ingredients in a blender and blend until smooth and no chunks remain, about 2-3 minutes. Serve immediately.
