I know you aren’t going to believe me, but I have yet to use Daiya cheese. I’ve had it before at restaurants, but have not cooked with it myself. My just vegetarian roommates have been making pizza like crazy, so I decided to give the Daiya a try and make my own vegan pizza.
I made 2 pizzas with the cornmeal crust you can get at Whole Foods. Those are my favorite and saves a ton of time not making your own crust! I guess it’s the chef in me, but I can’t just buy some jarred tomato sauce, throw on the cheese and call it a day. I made my own tomato sauce from a can of fire-roasted tomatoes. Yum! It’s sort of half from scratch so it’s super easy and fast. Why not make your own? It’s great for pasta too!
Fire-roasted Tomato Sauce
14.5 oz can of organic fire-roasted tomatoes
1 tablespoon of soy sauce
1 tablespoon of balsalmic vinegar
2 tablespoons nutritional yeast
Nice dash of dried oregano, basil, marjarom, thyme, and black pepper
Simmer until while combined.
For toppings I sauteed some mushroom in balsamic vinegar and a pinch of sea salt, and topped one pizza with those and fresh basil. The other pizza I put on some fresh tomatoes and Fakin’ Bacon. Don’t know why, it just sounded good. So I turned on the oven, fried up the bacon, and layed out my toppings.
Then smothered them in two kinds of Daiya cheese. The Italian style and Cheddar style.
15 minutes in the oven and I was set. I haven’t made pizza in so long, but I must say this was the best vegan pizza I’ve ever had! I am now a Daiya believer. This cheese melted like no other and tasted like really cheese.
I love me some vegan pizza! I’m one happy girl!
