Pumpkin Two Ways and some updates

Tis the season for pumpkin. Two ways.  Many weeks ago in fact I began to see pumpkin take over the interwebs. I’m pretty late to the game having seen all my favorite bloggers already post pumpkin recipes. Better late than never right? One reason I have been so busy and not blogging as much; I launched a test group a few weekends ago for a new “Advanced” program for Wellness Reboot. Many people who did the 28-day program were like “What’s next?”.… Read more

Pumpkin Polenta, Good Anytime of the Year

March Cooking By Color – Orange Polenta is one of those grains that gets shoved in the back of the pantry and forgotten. Then when I decide to make it I remember how much I love it and will eat it for days on end. That is what happened with this dish. I guess it was only natural that with an opened can of pumpkin I would be making this dish again. I like polenta because it takes less than 10 minutes to make and is so versatile.… Read more

Guest Post: Gluten-Free Pumpkin Maple Cornbread Baked Bean Casserole

Cooking Tool of the Month – Casserole Dish I’ve been a big fan of Amanda’s blog Pickles & Honey for a while, so I was ecstatic when she agreed to do a guest post for casserole month. Creamy Pumpkin Egg Nog

What do you do when you have leftover pumpkin puree? You either make Pumpkin Spice Pancakes, Pumpkin Hot Chocolate or if you have some egg nog leftover you make this drink! I would call this a smoothie, but it’s so sweet and delicious I’d rather call it a treat. I threw in some protein powder so I could call it “healthy” 😉 Remember the trick to the perfect chilled smoothie is to use frozen bananas. But if you don’t have any frozen add some ice cubes.… Read more

No-oil Pumpkin Spice Bread

Happy Solstice everyone! My baking skills have been off the charts lately! I must admit I don’t usually like desserts without some oil, particularly cakes and cookies. But in the interest of eating as healthy as possible and giving the oil naysayers more options in my upcoming cookbook (which by the way you can pre-order already on Amazon. You know what you’ll be giving for Christmas presents next year!), I came up with this uber-healthy pumpkin bread just in time for the holidays!… Read more

Meatless Monday: Survey and Pumpkin Hot Chocolate

I’m not participating in Vegan Mofo this year because it would be too hard for me while I’m traveling around, but thought I would do this VeganMoFo survey that is floating around! Who doesn’t love surveys!? And since most of you are experiencing cooler weather I thought I’d share one of my favorite comforting drinks for the holidays. What is one food you thought you’d miss when you went vegan, but don’t? Cheese. Now it makes me throw up a little in the back of my mouth when I walk through the cheese department at Whole Foods.… Read more
