Indian Chickpea Wraps

This is one of my favorite recipes from our 28-day online cleanse. All the recipes are delicious, vegan, plant-based, no-oil, and unprocessed. Eating this way gives your body a reboot!

Indian Chickpea Wraps
Makes 2 to 3 servings

I adore Indian food but it’s usually laden with oil and fat. This dish is reminiscent of Channa Masala
but sweeter and without the oil.

1/2 cup diced onion
Pinch sea salt
2 cups cooked chickpeas
1/2 (8 ounce) can tomato sauce
4 dried apricots, thinly-sliced
1/2 cup filtered water
1 tablespoon red wine vinegar
1 tablespoon tamari
1 tablespoon thinly-sliced fresh ginger
1 teaspoon Chinese Five Spice
1 teaspoon coriander
1/2 teaspoon garlic powder
Sea salt and pepper, to taste
Greens for steaming

Directions:
Dry sauté the onions for a few minutes. Stir in remaining ingredients until well combined. Bring to a boil then simmer, stirring occasionally, until most the liquid has cooked off. Season to taste with salt and pepper.

Serve inside your tortillas of choice with salad mix and sliced veggies.
