Cooking By Color Starts Again!

Hello folks! This blog took a downturn when I started working out a lot and training for my first bikini competition. That is now behind me (!!) and you can read more about the experience over at my fitness blog if you are interested!

It’s time to start our Cooking By Color feature again. I’m excited to bring you new and improved recipes like this one today. We are going to do RED again because the summer months produce so many beautiful red fruits and veggies. I’m all about seasonal eating so take a look at what is available at your farmer’s market. Berries are abundant, red bell peppers, beets, radishes, peaches, nectarines, plums, cherries, tomatoes, pomegranate, cranberries, apples and red onion. I can’t get enough of red foods!!

Last weekend I had a potluck to attend and needed something fast but delicious to bring. Quinoa is a typical go-to potluck dish and thankfully I had a huge bag of red quinoa lurking in the pantry. Thrown together with a tangy, curry dressing and beautiful red beets this dish was a hit at the potluck! And now I share it with you!

Curried Quinoa Salad with Beets & Orange

What do you think of beets? Usually people love them or hate them. I used to not be a fan and then one day, boom, I loved beets. My roommate said to me as we were grating beet over our salads today for lunch that when she finally had beet in her salad she was like “Where have you been all my life?”.
