What vegans eat in the summer: Magical Raw Tacos

Hi sun-kissed beauties! I’ve already shared this recipe on my blog but wanted to do a video to show you how fast and easy you can make your meals in the summer. Raw tacos are my go-to summer meal. You can put all kinds of delicious fillings inside! Since you are skipping the tortillas (and the gluten) and replacing it with water-dense lettuce you have a meal that is going to cool you off and hydrate you. Just perfect for summer!

Be sure to check out my article on HappyCow.net for more tips on how to eat during the summer!

I’m trying a new way to film my videos so you can see more closely what I’m doing. So I’ve used my computer to film the chopping. What do you think of this new set-up? I love showing knife techniques because learning how to chop will save you so much time in the kitchen!

Prep Time: 10 minutes

Ingredients (5 to 7 servings)

  • 1 head romaine, washed
  • 1 carrot, thin matchsticks
  • 1 cup cucumber, diced small
  • 1 avocado, cubed small
  • 6 basil leaves, chiffonade
  • Red Pepper Cashew Spread
  • 1 cup cashews, soaked 3 hours
  • 1/4 cup water

  • 2 tablespoons tamari
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 lemon, zested and juiced
  • Sea salt, to taste
  • Cayenne (if you want it spicy)

Instructions

Drain cashews. In a food processor, blend cashews with water until fairly creamy, about 2 minutes. Add the rest of spread ingredients and blend until smooth. To assemble taco, spread red pepper cashew spread on a lettuce leaf and top with a sprinkle of carrot, cucumber, avocado, and basil. Repeat. Serve immediately.
