Meatless Monday: Pineapple-Cucumber Gazpacho

Hey everyone! Hope you had a fabulous weekend! Saturday I went to the Ringling Brothers Circus protest in Dallas. It was my first circus protest and I had some really great conversations with some parents. I stationed myself on the side entrance where most people had already bought their tickets. I gave them a leaflet and asked them to please consider not buying tickets next year. I told them of the cruelty that happens behind the curtain and even though it’s been going on for 200 years there are other entertaining and educating things they could take their children to do that doesn’t involve animal cruelty. They seemed receptive.

I’m really happy that there is a strong movement against animal cruelty in Dallas. It’s not anywhere near what it was in Los Angeles, but we are making a difference where it’s really needed. Texas has a long way to go, so I feel blessed to be here in the trenches helping people go vegan.

Another thing about Texas is it’s HOT!! I’m melting and it’s only getting hotter. It’s actually suppose to be 108 this week. WTH?? Raw food and cold soups (and ice cream shakes lol) are the only thing sounding good to me right now. Here’s a delicious cooling soup from Blissful Bites. Have you got your copy yet?

Pineapple-Cucumber Gazpacho
Makes about 4 servings

I used to have a soup like this in the summer at a local cafe. That version had too much raw onion so I made my own with the perfect amount. Very simple to make this is a soup you’ll love all summer long.

2 English cucumbers peeled and chopped
1 1/2 cups green pepper seeded and chopped
1 green onion chopped
2 tablespoons tamari
2 tablespoons lemon juice
2 tablespoons lime juice
1 cup cilantro
1 can (29 ounces) pineapple with juice (or 1 1/2 cups fresh pineapple with 1 cup water)
1 teaspoon cumin
Sea salt and black pepper, to taste
Pineapple rings for garnish (optional)

Directions:
Blend all ingredients in a blender for about five minutes or until no chunks remain. Chill for at least 15 minutes before serving. Decorate with pineapple rings.

Blissful Variation: For a kick add 1 tablespoon chopped jalapeno and fresh mint.
