Healthy & Delicious 4th of July Eats
Whether you celebrate 4th of July or you plan on having a BBQ this summer we've got your covered for delicious yet healthy dishes to serve all your friends. Group gatherings often have vegans co-mingling with omnivores, so it's the perfect opportunity to share good food and get your meat-eating family and friends to try new things.
BBQ side dishes are often vegetarian or vegan by default, but what about main dishes? There are endless possibilities of making traditional meat-based dishes into healthier plant-based ones. But if you aren't into imitating the usual BBQ fare, then you can spotlight the veggies! Make grilled veggies and corn and grilled fruit is my new favorite thing. Grill up some pineapple and make tacos with it filled with veggies.
What I did here is I smothered corn tortillas with hummus dip and top it will lettuce, tomato, carrot, avocado, boiled yams, avocado and the grilled pineapple. There was no need for a sauce. The juicy grilled pineapple on these tacos turned me into an instant grilled fruit lover. You can make these tacos with grilled peaches too, which are in season right now!
