Meatless Monday: Fall/Winter Seitan Scramble

Hey everyone, I’m back!! I still need to do my last travel log from Bangkok, but until then I made a cooking video for ya! It’s been WAY too long and I apologize. I decided to have some girlfriends over for a potluck brunch last week. I needed to perfect my low oil gluten-free biscuit recipe for my cookbook and also whipped up this scramble using whatever was available in the fridge. So, I guess it should be called Raid the Fridge Scramble.

Is it cold where you are? In Los Angeles this week it was 75 degrees and sunny! Feel free to use whatever vegetables you have on hand for this scramble.

I’m using a fairly new product in this recipe called Coconut Aminos, made from the company Coconut Secret. This new company has a wide range of natural food products that I adore. Fall/Winter Seitan Scramble

1/2 cup water
1 cup sweet potato, small cubes
1 cup carrot, diced
1 cup red pepper, diced
1 tablespoon thyme
1 tablespoon marjarom
1 tablespoon nutritional yeast
1 cup seasoned setian, chopped
Coconut aminos or tamari, to taste

Sorry for the bad video quality. That bright window behind me was causing the camera to go dark in and out. I needed to put something over that window! Not my house, lesson learned.

Brunch is probably my favorite meal of the day!! What are your favorite brunch foods?
