Blissful Roundup: Got to Be Gluten-free

On my quest for health, I tend not to eat much gluten. Most of my recipes are gluten-free by default. I decided to find some gluten-free blogs to add to my reader when I started experimenting with gluten-free baking (a whole other ball game!). It was unfortunate that I didn’t find many solely vegan gluten-free blogs (excluding raw blogs), but found many that have vegan options. This week’s Blissful Roundup features my favorite gluten-free recipes/posts of the week (which mostly come from veg blogs).

Basil Grilled Tofu with Okra, Red Peppers and Portabellas from ManifestVegan.com – This is one of my favorite gluten-free blogs hands-down and Allyson’s recipe will not disappoint!

Pick Your Own Gluten-Free Pancakes from DietDessertnDogs.com- Ever wanted endless number of ways to make gluten-free pancakes? Well Ricki has you covered. Major food porn behind the link.

Gluten-Free Chocolate Cake Recipe – With my birthday coming up tomorrow I had to feature a cake recipe! This chocolate cake looks divine!

Quinoa Fried Rice from BookOfYum.com – I love me some quinoa. Especially now that warmer weather is coming, it’s my favorite quick-cooking grain of the season! This recipe looks delish!

Lemon Coconut Cream Scones – This is an older post that I stumbled upon and it looks heavenly! I love using coconut products in place of dairy or butter in baked goods. I often use coconut oil instead of butter or Earth balance in recipes because it’s healthier and less processed. You can usually use it in equal parts, just beware that the recipe will now have a touch of coconut taste to it. I will be using coconut palm sugar in this recipe. Yum!

Quinoa Corn Griddle Cakes from The Girl and The Grain.com – I’ve experimented with quinoa flour some, but it’s SO darn expensive I usually choose something else. I could eat cornbread everyday, so this recipe looks really good to me!

The Gluten-free Goddess – I just discovered this blog and though it isn’t completely vegan it has a ton of recipes you can enjoy.

I am on a quest to make the perfect vegan gluten-free pizza crust, so let me know if you’ve found one of those! Experiments start back up in the Blissful Chef Kitchen next week (finally done with this cleanse!).

    Thanks so much for including me in this wonderful roundup! And it’s great to see a couple of blogs that are new to me in it–will have to check them out!

    I also love using coconut oil instead of butter (especially since I don’t use Earth Balance–it’s my only “firm” fat). I also love Jessy’s GF blog, happyveganface, and celiacteen (though she’s not vegan–but lots there to enjoy, too). 🙂
