Blissful Roundup: Favorite Salads

If you follow me on Twitter, you see my daily tweets of my favorite recipes that I find on the internet, from my favorite bloggers and websites. Many of you don’t use Twitter, so every Wednesday is going to be Blissful Roundup featuring my favorite posts from the last week.

Golden Beet, Fennel and Grilled Pear Salad with Dandelions from SoundlyVegan.com – I love me some beets and this salad couldn’t be more easy or beautiful. Such creativity using dandelions. I love grilled fruit. Not only does it bring out the flavor, it makes the sugar in the fruit more digestible.

Cherry Tomato and Baby Cucumber Salad from LovingGoodies.com- This salad is one of my standard favorites, it’s super easy to make, and uses Summer seasonal produce.

Rawsome Spagetti and Marinara Sauce by HealthyGirlsKitchen.com – Even though this is “pasta”, since it’s raw and made with all vegetables I’m going to add it to my list today. This looks yum and makes me want to buy a Spiralizer! If you don’t have one you can easily make zucchini “pasta” by peeling the zucchini length-wise moving around the zucchini.

Gena’s Pistachio and Fig Salad from ChoosingRaw.com –  Looks yum and easy! I LUV figs!

Blackberry, Strawberry and Mango Salad from FoodsForLongLife.com – Gotta have a fruit salad on this list! This is beautiful. You can change this up each season using the fruit you find at your local farmer’s market! I personally can’t stand the taste of Stevia, so I will be substituting a drop of maple syrup.

Asian Noodle Salad w/ Sticky Ginger Tofu by Healthy Happy Life – I’ve been crazy about noodle bowls lately and this one looks divine! I will be using kale instead of spinach for mine.

  1. I’m going dairy free this week as an experiment, and I’ve been looking for alternatives to my favourite non-vegan salad recipe (spinach, dried tart cherries, pear, candied pecans, and gorgonzola). I think I’ll give the Asian noodle salad a try!

  2. I’m such a salad fiend. Thank you for sharing some of your favourites. We are just about to start market season in Toronto – salads are my favourite way to celebrate the fresh flavours that available for such a fleeting moment.
